History:
The meatball has a disputed story revolving around its original creation with claims stating the dish comes from ancient Rome as well as the Middle East. In all likelihood, the dish came from ancient Persia where leftover meat was ground up and used to create Kofta. Venetian traders brought the dish to Europe through land and sea trading routes surrounding the Mediterranean Sea. Traditionally meatballs are never served with pasta in Italy and function as an appetizer to signal the flavors of the pasta dish to follow.
Ingredients:
1 lb beef chuck
2 egg yolks
4 slices of thick cut bacon
4 tbsp minced onion
2 tbs minced garlic
½ cup panko breadcrumbs
¼ cup whole milk
3 tsp parmesan cheese
1 tsp Worcestershire sauce
2 tsp granulated sugar
2 tsp parsley
2 tsp basil
2 tsp paprika
2 tsp onion powder
Salt and Pepper to taste
Extra Virgin Olive Oil
Directions:
In a skillet, place down your bacon slices. Start the bacon slices in the pan before you turn on the heat (the key to is cook them low and slow!). Pepper the sides of your bacon to add extra flavor! Once both sides are golden, remove from the pan.
In a small bowl, combine the milk and breadcrumbs, and let them soak for a few minutes. This will ensure that your meatballs stay moist!
In a large bowl, add the meat, spices, egg yolks, Worcestershire sauce, parmesan cheese, herbs, sugar, and bread crumb mixture.
Roll the meat mixture into even balls. If you have trouble keeping the balls even, use a spoon to even scoop the mixture. In a hot skillet, place your meatballs separated roughly one inch apart (this step is important because if you place your meatballs too close, they will steam rather than crisp up around the edges.) Turn your heat down to medium heat.
After 3 minutes, flip the meatball, and repeat this process until you have a dark brown coating around the entire ball.
In the video, I served it with a basic marinara sauce with mozzarella cheese on a toasted roll. However, you can add these meatballs to a variety of dishes. Add them to a Swedish meatball dish with brown gravy and mushrooms, or on top of spaghetti (not a traditional Italian dish but that is for another post!). These are great versatile meatballs to add to any dish! Enjoy!
