History:
Once again we find the origins of this recipe derived from the Romans. During the time, where the Roman Empire was expanding through modern day France, we see the traditionally cultivated mustard seed start to be infused with honey of the Gauls. The Gauls were the peoples of antiquity France who had been using honey extensively in their rustic cooking. The combination of the sharp mustard flavor and the sweet honey was evolved overtime into the broad flavor profile that is our contemporary honey mustard.
Ingredients:
For the chicken:
6 chicken fillets
½ cup of heavy cream
1 ½ cups of panko breadcrumbs
2 large eggs
1 tsp paprika
1 tsp garlic powder
1 tsp dried parsley
Salt and Pepper to taste
For the honey mustard:
2 tbsp honey
2 tbsp Dijon mustard
2 tsp paprika
2 tsp apple cider vinegar
Salt and Pepper to taste
Extra Virgin olive oil
Directions:
You are in for a treat! These chicken tenders are a healthier option (they are baked rather than fried) and they are paired with a tangy and sweet dipping sauce! For the honey mustard, in a bowl combine the honey, Dijon mustard (NOT YELLOW MUSTARD!!!), paprika, apple cider vinegar, and the salt and pepper. That is it!
For the chicken tenders, take your fillets and marinate them in the heavy cream for at least 30 minutes. By doing this step, you will have nice and juicy tenders! Preheat your oven to 375 degrees Fahrenheit. In a bowl, whip your eggs together. In another bowl add your panko breadcrumbs (I use unseasoned panko), paprika, garlic powder, parsley, salt, and pepper and combine them all together.
Dredge the marinated chicken in the eggs first and then coat them generously in the breadcrumb mixture.
Cover a pan with aluminum foil and generously coat with the olive oil. Place your chicken tenders on the pan and drizzle with olive oil. Cook for ten minutes, and then flip the tenders and cook for another ten minutes. Repeat this step until you have a golden-brown crust.
Dip into the honey mustard and enjoy!
