History: This dish is not something that your mom invented for brunch, nor is it a French dish, as that is the usual second guess. The name ‘quiche’ comes from the word ‘Kuchen’ which is a German word for cake! The original recipe dates from Medieval Alsace-Lorraine, a border region between France and Germany, (Then known as the Kingdom of Lothringen) that was under German control until the end of the First World War (1918). After the World Wars the dish exploded across England and then found its way as a brunch staple in the U.S. in the 1950s.
Ingredients:
1 Pie Crust
5 eggs
1 slice of ¼ inch thick ham
2 slices of bacon chopped
1 slice of ¼ inch thick swiss cheese
2 cups of grated cheddar cheese
¼ cup of heavy cream
¼ cup of chopped broccoli
¼ cup of chopped onion
¼ cup of chopped mushroom
1 vine tomato THINLY sliced
Salt and pepper to taste

Quiche is found in every kitchen across the world and in many forms! Every family has their own way of making this classic dish, so here is mine (if you have an addiction to cheese, you’re in the right place, and if you have an allergy to dairy, TURN BACK NOW!).
Let us start with chopping your broccoli, onion, and mushrooms (I know there are mushroom haters out there, so feel free to substitute with anything you want, but just know I trust you less because mushrooms rule). Chop your ham and swizz cheese into ¼ inch by ¼ inch squares and set aside. Grate the cheddar cheese and save half for later. In a bowl, combine all these ingredients and then place in your pie crust.
In a pan, cook your bacon until crispy and then place on napkin to absorb the grease. Cut the slices into bites and set aside for later.
In a bowl, whisk your eggs and heavy cream then season with salt and pepper. Pour over the chopped vegetables, ham, and cheese in the pie crust. Crumble the bacon on top. Then add the remainder of your shredded cheddar on top. Last, place your sliced tomatoes (these give the quiche such a delicious sharp bite!)
Bake in the oven at 350 (F) for about 40 minutes (or until the top turn a nice dark golden brown).
