Pork and Vegetable Pot Stickers

History: It is believed that this dish originated in China during the Song Dynasty (960- 1280 A.D.). This is over 200 years before Europeans would land in the Americas. While the exact origin of the Pot Sticker is lost in the fog of history there is a legend that accompanies this savory treat. According to the myth, the royal chef to the Emperor accidentally burnt the bottom of the dumplings he was preparing to serve to the court. Having no time to correct the error he used steam to rehydrate them, then served them dark side up and claimed they were his new creation. The court and the Emperor loved the dish, luckily for the chef!


Ingredients:

1 pkg of Ground Pork

1 tbs Ginger

3 Carrots Shredded

½ Red Cabbage Shredded

6 garlic cloves chopped

1 can of Water Chestnuts diced

3 tbps of chopped green onion

6 tbps of low sodium soy sauce

3 tbps of oyster sauce

2 tsp of fish sauce

Salt and Pepper to taste

1 package of won ton wrappers


Directions:

These pot stickers are amazingly easy to make and very addictive (I may or may not have put 20 of these bad boys back in one sitting…). I would like to give a quick shout out to my friend Bridget, who brought many Asian style cooking techniques to my kitchen! To start chop your garlic, water chestnuts, and green onion and place into a mixing bowl. Next shred your cabbage and carrots and add to the bowl. With a zester, zest your ginger into the bowl (zesting it will allow the ginger flavor to blossom in this mixture. Add the soy sauce, oyster sauce, and fish sauce (add as little or as much of these sauces as you want!). Slightly salt and pepper to taste and combine all the ingredients. (See this is so easy!).


In a small bowl, add some warm water. Take out your wonton wrappers and slightly dampen the entire sheet. Place a small amount of the mixture in the center of the square wrapper. Place the wonton in your hand to mold it (as seen in the video).


In a pan, heat up some oil and cook the pot stickers until they are golden on the bottom (make sure your keep moving them around, so they do not stick!!! (no pun intended). Then add some water to the pan and cover and let steam for about 3-5 minutes. Serve with a side of soy sauce to dip in and enjoy!
